Judith Richardson, author of Mouthwatering Vegan Cuisine, delighted attendees with samples of her delicious vegan recipes after holding a demonstration on Dec. 3 at the Courthouse Road church in Richmond, Va. Richardson demoed three of her recipes—including the one she says she is most proud of, her vegan lasagna rolls. This event was held in partnership with Adventist Healthcare and the Potomac Conference to promote healthy, transformational living.
“I wouldn’t have known the food was vegan,” said one attendee. “It goes to show that you can eat healthy without sacrificing taste.” Kathleen Coleman, Faith Community Health Network coordinator for Adventist HealthCare, and Sally Cortez, also from Adventist Healthcare, helped coordinate the event and spoke on the importance of diet. About 35 attended this event, including several members from the neighboring Allegheny West conference.
This is the second time Adventist Healthcare and the Potomac Conference have partnered. In August, the two entities worked together at Potomac’s Pastor / Teacher Convention to provide health screenings for employees.
